So, it’s amazing…I am actually cooking again! I used to love cooking and then over the years, lost my enjoyment of it. It is slowly coming back…
We made this tonight and it was really good. We grilled it inside insead of on the grill outside (because my dear sweet husband hasn’t cleaned it since we moved…LOL) but it turned out just fine. Jacey cleaned her entire plate!

Photo from Rachel Ray’s website (sorry, my dishes are never that pretty).
We made this for dinner tonight and it was awesome. Even Bryan who is not a big vegetarian type eater liked them. We used zesty herb wraps instead of plain and monterey jack instead of goat cheese since I am not a fan.
This recipe is a definite keeper. Not too terrible either, only 619 calories per wrap the way we made it.

1. Jacey likes to read and we have found 2 series of books that she just LOVES. We bought one yesterday and by this morning she was done with it!
2. My surgery has been a turn around for all of us; it has gotten us all eating better, eating less and back in the exercise frame of mind.
3. Weekly lunches with the *girls*, I am looking forward to them.

It’s hard to believe that my Dad has been gone for 3 years now. I wasn’t blessed with him at birth, but once he was in my life, it didn’t take long for a lasting bond to be made. He never made me feel like I wasn’t *his* and was one of my biggest fans. There isn’t a day that goes by, that I don’t wish I could tell him this or tell him that.
I love you and miss you Dad!
